Gluten-free Swedish meatballs

Recipe

  • 500 g organic grass-fed minced meat (cow)  
  • 100 ml gluten-free oats  
  • 100 ml water 
  • 0.5 yellow onion, grated 
  • 1 egg  
  • 1 tsp salt  
  • A pinch of black pepper  

Optional:  

Fresh parsley, chopped   

 

How to  

  • Mix oat and water, let sit for 10 min. 
  • Add minced meat, egg, spices, onion and optional chopped parsley. Mix well but don’t overwork it as then it can become chewy. 
  • Use a spoon dipped in water to scoop up the mix and form small meatballs with your hands. Place the meatballs on an oven safe tray lined with avocado oil. 
  • Bake in the oven at 150 C for 30-45 minutes (depending on the size) until cooked through. Mix them around (turn them) after half of cooking time to make them cook even. 
  • Serve with a fresh green salad, fresh parsley, lingonberries and pickled cucumber on the side.

Health benefits 

This is a gluten free version of the classic Swedish meatballs. Preparing the meatballs in the oven on low/medium heat is a more gentle and healthier way to cook compared to frying them in a pan. If you still want a bit more of a crispy surface, cook them in a pan just a few minutes before serving.
