Vietnamese spring rolls

Vietnamese spring rolls

2-3 people  

   

1 packet of spring roll wrappers, 12-15 sheets  

1 organic carrot – thinly sliced cut into matchsticks 

0.5 cucumber – thinly sliced cut into matchsticks 

1 crispy lettuce  

1 avocado, sliced  

160-200 g fresh cooked shrimps  

1 red organic bell pepper, thinly sliced  

0.5 fresh mango or frozen, cut into slices or pieces  

1-2 spring onions, thinly sliced  

Optional 4-6 green asparagus, precooked and sliced  

Bunch of fresh mint  

Bunch of fresh coriander  

Handful of sprouts  

  

Sauce 

1 tbsp fish sauce  

0.5 tbsp toasted sesame oil  

1 tbsp japanese soy  

2 tbsp rice vinegar  

1 tbsp fresh lime  

1 pinch of chili flakes  

1-2 tsp fresh ginger, grated  

  

Toasted sesame seeds to serve  

 

How to 

1. Prepare the dipping sauce by mixing all the ingredients together and set aside. 

2. Wash and prepare all the vegetables, herbs and shrimps. Cut or slice and place in small bowls or on a plate and arrange them on your worktop so it is easy to put together the rolls. 

3. Place a bowl or a deep plate with lukewarm water and assemble one roll at a time by dipping one sheet in the water until semi soft and place it on a damp plate or cutting board, to avoid that the rice paper doesn’t stick to the surface while putting it together. 

4. Assemble the rolls by starting placing a salad leaf in the center of the rice paper. Leave a bit of space to fold the edges around. Then add all the other ingredients one by one. 

5. Start rolling by turning the two sides inwards and then roll into a firm roll. 

6. Transfer to a plate (space in between so they don’t stick). 

7. Serve with the sauce and top with toasted sesame seed and fresh herbs. 

  

Health benefits 

This is a light, fun and fresh summer recipe as an alternative to more traditional summer salads. It contains colourful fresh vegetables, herbs, antioxidants, fiber, healthy fats from avocado and lean protein from the shrimps.  

The rolls can be prepared beforehand or by each person at the table for a social gathering. It’s a good appetizer or as a lighter summer dish for warm days. Be creative with the filling by adding for ex. chicken or other vegetables you feel like.
